Luis Solis, founder of Don Carmelo’s in East Norwalk, is passionate about the ingredients that go into their menu.
Don Carmelo’s calls themselves “California-Mex” – a term Luis came up with.
“Different than Tex-Mex, our original chef came from California and brought all of those flavors with him,” says Mr. Solis.
“We use only the highest quality fish, meats and produce, delivered multiple times per week, such as Angus New York steak, wild caught shrimp (instead of farm-raised) which our customers say makes for a lighter and more flavorful dining experience.”
Don Carmelo’s has been preparing its traditional and signature dishes in East Norwalk since their beginning in 2012. “We manage about twenty different kinds of sauces — some strictly for meat, some strictly for fish.
We just wanted to bring a different flavor to Norwalk. It took us a little while for people to understand our food, and because of this, they really appreciate what we do.”
Don Carmelo’s Mexican Grill & Tequila Bar is open Monday-Thursday 3pm-9pm, Friday & Saturday 12pm-10pm and Sunday 12pm-8pm.
